Ubriaco al Prosecco (literally “drunken” cheese) gets its signature sparkle from a long soak in Prosecco wine. Made in Italy’s Veneto region, where the grapes grow just miles away, this firm cow’s milk cheese is infused with notes of green apple, ripe pear, and delicate florals. Crystalline yet creamy, it’s a cheese that feels ready to celebrate. Pair it with prosciutto and a spoonful of white wine jelly—and yes, open the bubbly.
“We brought in this cheese for our club members for the holidays, and it knocked it out of the park, so we kept it! The prosecco adds these floral, fresh apple and pear notes that make it feel extra celebratory. Definitely one that deserves a glass of bubbly.”
- Ubriaco is a traditional Northern Italian style of cheese in which wheels are soaked in wine or grape must, a practice that dates back centuries to when farmers were said to hide wheels from tax collectors in wine barrels.
- For this version, Sergio Moro coats the curds in Prosecco grape must during cheesemaking and then bathes the full wheels in Prosecco DOC.
- This double dose of Prosecco allows the wine’s fresh, fruity, and floral character to permeate the interior paste.
- The result is a firm, aged cheese with a pleasantly crystalline texture, balanced by a creamy mouthfeel and bright, wine-kissed finish.
- The rind, wrapped in grape leaves and soaked in wine, is inedible but plays a key role in developing the cheese’s aromatic complexity.
When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
