Stichelton is a truly special English blue, with meaty notes that dissolve into a sweet, nutty finish. It's crafted by hand according to tradition (that means hand-salting and hand-ladling curds) at Collingwaithe Farm in Nottinghamshire using raw milk from their own cows. Once carefully aged for months, you can taste the quality in every rich, slightly piquant bite. Bring substantial crunch to this creamy selection by pairing it with Raincoast Crisps Cranberry Hazelnut Crisps.
"We always bring Stichelton in around the holidays, and I couldn't imagine my celebrations without it. Putting out a wedge with honey and some good chocolate while we're decorating the tree? Perfection."
Allergens: Milk
- Stichelton was named for the old English word for the village of Stilton.
- It was created by cheesemaker Joe Schnieder in 2006 to revive a traditional way of making English blue.
- Those traditions—using raw milk from a single herd, hand-ladling curds, hand-salting—create a depth of flavor and impeccably rich texture that's worth savoring.
- Stichelton is produced in a dairy in an old brick barn on the Welbeck Estate in Nottinghamshire, England.
- Founder Joe Schneider works with Neil’s Yard Dairy to produce the cheese.
- To stay informed about what the cows are eating and what the milk is like, Joe insisted that the dairy be located on a farm.
Harder blue cheeses can stay fresh for up to two to three weeks in a crisper drawer when wrapped tightly and unopened, while softer blues may start to dry out after approximately two weeks. The best thing to do is keep the cheese in one of your refrigerator drawers or the vegetable bin; this will help to keep your cheese from drying out. Additionally, we recommend storing your blue cheese in the aluminum foil that it comes wrapped in. All cheeses and meats are perishables—by definition they degrade over time—so we encourage our customers to enjoy the cheese while it's in peak condition!
