At first sight, you might be fooled into thinking this Roncal was a manchego. But once the flavor hits your palate, you’ll notice it’s gamier and more intense. The hard, grainy, and straw-colored paste is packed with wild, barnyardy notes and a sheepy tang, along with herbaceous and grassy undertones. Roncal has DOP (Protected Designation of Origin) status. It was the first cheese in Spain to receive that designation.

Though Roncal is made year-round, spring and winter are the main seasons for production.
Roncal hails from Navarra, in the Basque territory, and has a history that goes as far back as the 13th century.

When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
