Legend has it Maroilles dates back more than a thousand years, so every pungent bite is infused with history. Today's version is known for its sticky orange rind, pudgy interior; and funky aroma that gives way to flavors of umami, mushroom, and lemon. This washed rind originally made by monks is French cheese at its finest. Pair with Rustic Bakery crisps and Three Little Figs French Onion Confit for the ultimate savory-sweet bite.

“Maroilles has the perfect level of funk for everyday eating. Catch me all summer sitting outside with a big wedge and a glass of well-chilled sauvignon blanc.”

  • It’s said that Maroilles dates back to the year 960. It was historically made by French monks and is named after the village in Northern France where it was developed.
  • Maroilles is a PDO cheese, meaning it was granted “Protected Designation of Origin” status by the EU and can only be produced in a specific region according to a set of strict regulations meant to protect the integrity and tradition of the cheese.
  • The square blocks are washed with salted water and aged a minimum of 5 weeks in humid cellars.
  • The wash in brine helps develop the sticky orange rind and funky aroma, hallmarks of washed rind cheeses.

When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
