- Ginnimere begins as Winnimere, a raw cow’s milk cheese wrapped in spruce bark and washed throughout aging to develop its signature soft, custardy interior.
- For this special release, the rind is washed with Barr Hill gin, made with juniper and raw honey, which infuses the meaty, umami-packed cheese with subtle botanical and lightly sweet aromatics.
- The spruce wrap helps the cheese hold its shape as the interior becomes luxuriously spoonable, while also lending woodsy, forest-like notes.
- As it ripens, the interior transforms into a silky, almost molten texture—perfect for scooping straight from the wheel or gently warming for an ultra-indulgent experience.
Located in the Northeast Kingdom of Vermont, Jasper Hill Farm is a dairy farm with an on-site creamery where they make and age a variety of well-loved cheeses.
The state-of-the-art Cellars at Jasper Hill Farm consist of 22,000 square-feet of underground space, where they ripen Jasper Hill Creamery cheeses as well as cheeses from other local producers.
Their farm team cuts and bails hay during summer to dry for winter months, ensuring their cows have local feed during the harsh Vermont winters.
Among other waste management projects, they feed leftover whey from cheesemaking to heritage breed pigs who live outside the cows’ pasture.
When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese.The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
