Golden Fleece takes everything you love about young Manchego—nutty, buttery, and gently sheepy—and adds saffron for a warm, earthy lift and a stunning golden hue. Aged four months, its slightly granular, pleasantly rich texture melts on the palate. Saffron, one of the world’s most prized spices, brings a subtle floral depth that lingers. Pair with guava paste or marcona almonds for a sweet-savory bite.

“I love this one for people who think they already know Manchego. The saffron doesn’t shout—it just adds this warm, almost savory depth that keeps you coming back for another slice.”
Murray’s Cheesemonger – New York, NY
Pasteurized Manchega Sheep's Milk, Calcium Chloride, Cheese Cultures, Microbial Rennet, Salt, Saffron
  • Made from pasteurized Manchega sheep’s milk in Castilla-La Mancha, Spain, Golden Fleece follows the traditional Manchego style, with a firm yet yielding paste and a natural rind.
  • Saffron threads are embedded throughout the cheese, giving it a golden color and delicate earthy, floral notes that complement the milk’s natural richness.
  • At four months of aging, the texture is slightly grainy and lightly oily—a hallmark of good young Manchego—offering a satisfying, melt-in-your-mouth quality.
  • The flavor balances toasted nut and butter with a gentle tang, while the saffron adds depth without overpowering the cheese’s classic profile.
  • This cheese earned a bronze medal at the 2021 World Cheese Awards, a testament to its thoughtful execution and standout flavor.

When you receive your cheese, unpack the order and refrigerate the items. We

recommend using the cheese paper we send most of our products in to store the cheese.

The cheese paper helps cover the items and stop them from drying out, while also allowing

the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation

to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
