El Meteoro Pablo's Smoky Rojo Hot Sauce

The story goes that this sauce was first served at a family gathering in Lockhart, Texas, and it was so good that it needed to be bottled up and shared. Since then, El Meteoro’s Smoky Rojo Hot Sauce has won fans and awards. Invitingly thick and textured, it has a smoky, moderately spicy chipotle flavor balanced by tomato and onion, making it great for a crowd. Perfect for grilling season—especially with Schaller & Weber Knackwurst—but equally good as a marinade, a dipping sauce, and a topper for tacos.
“I can’t get enough of the smoky, earthy flavor in this sauce. My too-tired-to-cook dinner is Queso Campesino Queso Quesadilla melted over tortilla chips, all slathered in this sauce—the lazy woman’s nachos.”
Tomatoes, Onion, Cilantro, Non-Gmo Olive Oil, Lemon Juice, Garlic, Chipotle In Adobo Sauce (Chipotle Peppers, Tomato Puree, Onion, Vinegar, On-Gmo Canola Oil, Sugar, Salt, Paprika, Garlic), Spice, Salt
- El Meteoro sauces started at The Meteor, an Austin, Texas, cafe founded by friends Doug Bell (the founder of Intelligentsia Coffee) and Chris St. Peter in 2019.
- It began as a unique space offering locally sourced food, natural wine, coffee, and bicycles.
- Their goal with the sauces, which are also served in their cafés, is to make condiments that you’ll want to put on just about everything. They range in spice level—some you can slather on, others you’ll want just a couple dabs.
- Their Super Green Cremosa won the 2023 Good Food Foundation Award, and their Pablo’s Smoky Rojo was awarded the same recognition in 2024.
