This Double Gloucester is semi-firm and named for a picturesque region of England that is best known for its rolling hills and lush landscapes—as well as the famous Cooper Hill’s Cheese Rolling and Wake even that occurs each spring.
What separates a “Double Gloucester” from a “Single Gloucester” is not clearly defined, though some theories suggest it’s related to whether milk is skimmed in the creation of the cheese—or even that a Double Gloucester is twice the height of a single.
Our Cotswold is a classic pub cheese that is perfect for snacking, or melting over eggs or burgers.

When you receive your cheese, unpack the order and refrigerate the items. We recommend using the cheese paper we send most of our products in to store the cheese. The cheese paper helps cover the items and stop them from drying out, while also allowing the cheese to breathe. Since cheese is mold, it's a living thing! If you cut off air circulation to the cheese, you can actually cause it to suffocate and spoil at a faster rate.
