Cossanella is washed in annatto, an orange-tinted food coloring derived from the seeds of the achiote tree. * A bloomy rind cheese, Cossanella’s rind is formed by intentionally cultivated molds that “bloom” on the surface of the cheese. The cheese is patted down during the aging process, layering the mold over time to form the delicate rind. * Cut through Cossanella’s richness by serving it with a generous portion of Sicilian Herb Marinated Olives.
